In one of the most counter-intuitive trend lines of recent times, burger thickness has negatively correlated with pant width. From the early 2000s until the late 2010s, as jeans were at their skinniest, the most desirable burger had a patty so thick there was enough room for a solid char on either side, giving way to a noticeably pink centre. In the last five years or so, as pants have gotten wider and wider in the leg, burger patties have gotten thinner and thinner — sometimes now being so thin as to be 95% Maillard reaction and 5% juicy beef. The people behind former regular pop-up and now proper burger joint Baby G were some of the handful of burger enthusiasts who really brought the smashed burger to Auckland, and we’re so glad we don’t have to check Instagram now whenever we want one.
