Fantastic ramen in Newmarket.
Ajisen is a relatively large establishment (especially for a ramen spot), focusing on a base broth made predominantly of pork and chicken bones in addition to their signature roasted garlic and onion. The combination of broth and thick chewy noodles is extremely satisfying and decadent, almost kinda naughty. Ramen, when done well, leaves you planning to have it again at the earliest opportunity, and Ajisen really prompts that ‘again, again!’ hankering. The menu is surprisingly extensive, with heaps of add-on options and toppings like soft-soy-braised pork ribs, sesame-spiced pork mince and grilled teriyaki chicken.
