He’s a bit of a genius, chef Sid Sahrawat. Flavours, textures, masterful control of temperature and timing in the kitchen, and on top of all that he has a rare eye for beauty (as reflected in the carrot, smoked cashew, shiso and coconut dish pictured) and rare creative skill to go with it.

Sidart is his fine-dining restaurant, tucked away at the back of a weird old cinema building. The dining room is lovely, with a great view of the city, the service (in the hands of maître d’ Amanda Rogers) is smart and attentive, and there are some very appealing special options, including a chef’s table, test-kitchen night and five-course Friday lunch.

A favourite dish: Tuesday test kitchen (eight courses for $80 a head).
